Purple Cabbage and Acai Smoothie Bowl
I know this kind of sounds like a weird combination, but I love to challenge myself by adding not-so-standard veggies to my smoothies. I also love to get a rainbow of produce in my diet, and adding some purple cabbage to an acai smoothie bowl is a great way to get loads of color.
I find that cabbage lasts so long in my refrigerator that I often buy it as a “back up vegetable” in case I run out of veggies to eat. My cabbage was starting to fade, and I didn’t have time to cook it, so I decided to add it to my morning smoothie bowl!
The combination of acai and blackberries have such a powerful flavor that they really work to “disguise” the purple cabbage. Plus, acai is such a classic base for a smoothie bowl. In fact, it’s the original smoothie bowl! We can thank the juice shops of Rio de Janeiro for the creation of this delightful dish!
Since you can’t really find fresh acai in the supermarket, I like to buy the frozen acai packets. Some people use the dehydrated acai powder and add it to a base of banana or some other fruit, but that’s not really an acai bowl, is it?
Acai is so popular, I’m pretty sure it is now standard in most supermarkets.
I also added maca to this smoothie. Despite its popularity, I don’t actually use maca that much. However, since it’s in the cabbage family, I thought it fit.
Ingredients
1 package of frozen acai
½ cup of frozen blackberries
1/2 cup of shredded purple cabbage
1 frozen banana
1 tablespoon of maple syrup
1 teaspoon of maca powder
Toppings of your choice:
- homemade granola
- chia seeds or hemp hearts
- chopped almonds or nut of your choice
- shredded coconut
- sliced fruit or berries
- a pinch of cinnamon
Method
Remove the acai from the freezer and run under warm water for about a minute so it is slightly thawed. Chop or break the packet into smaller pieces and combine with the remaining ingredients in the blender. Blend until smooth, really smooth.
Poor the mixture in a bowl, top with your favorite toppings, and enjoy!
